Rinse the sangri pods thoroughly to remove any dust. Soak them in water for at least 6–8 hours or overnight to rehydrate.
Boil & Strain

Boil the soaked sangri until tender, drain, and rinse again. This makes them ready to absorb spices.
Cook the Sabzi

Heat mustard oil in a pan and add cumin seeds, asafoetida, whole red chilies, and spices like turmeric, coriander, red chili, and dried mango powder (amchoor). Fry briefly till fragrant.

Add the boiled sangri, mix well, and cook for a few minutes. Optionally, stir in yogurt for tang, or raisins for a touch of sweetness. Garnish with fresh coriander.
