Gunda (Cordia dichotoma) is a seasonal green fruit native to India, especially common in Rajasthan and Gujarat. It has a sticky pulp inside and is slightly fibrous, which makes it unique among pickles. Traditionally, its seed is removed carefully (without damaging the outer body), and the fruit is stuffed or marinated with hand-ground spice blends before being soaked in mustard oil.
